Mexican style, vegan burger patties !

Do you ever get that depressing, fatigue kinda feeling that lasts for a week, for no reason and you are just going crazy, because it’s killing you ?

That has been me for the past few days, I have just been feeling super low, sad but then happy, anxious, fatigued, hungry but sick and so on… I guess it’s just the English weather making me feel so. Here, the weather has its mood swings, as we all know and lately, it has really been PMSing, no joke – rainy then sunny, warm and suddenly cold…. BUT WHY

Anyways, what do you usually do to clear your mind ? I don’t know if that is just me but books, yoga and similar activities do not work for me at all, when I try to read my mind just starts contemplating life even more and everything just gets worse…. so I chill in the kitchen, literally… like a housewife.

That is how I made the best (I SWEAR) burger patties ever. If you are a mexican food, chilli con carne kinda thing lover – you are just gonna eat them all in one day (made 15 and if not for my sickness they’d all be gone by now). They don’t fall apart, your kitchen smells amazing and just the process of making them is what I find so relaxing haha. Maybe I should be depressed more often if that results in genious recipes ?


Ok, to the topic now. Here is what you need

  • 2 cups soy chunks
  • 1 can mixed beans
  • 1 can sweetcorn
  • 1/2 cup tomato puree
  • 1/2 cup water
  • 1 flax egg
  • 200g rice
  • Mexican spice

Processo that helped my depresso

  • Process the soy chunks into flour, or use any flour that you prefer (they just have extra protein)
  • Add the rest of the ingredients and process until they all come together
  • Form the the dough into equal patties (I made 15)
  • Sprinkle them with any seeds of choice if you like*
  • Bake at 180C/25min

This recipe makes 15 patties, each of them being only 100 kcal !!!
